Shakshuka with Wholegrain Toast

Eggs poached in a spiced tomato and pepper sauce, with wholegrain toast to mop it up.

Method

  1. Soften the veg

    Soften the onion and pepper in a pan, then add the paprika & cumin.

  2. Simmer the sauce

    Add the tin chopped tomatoes and simmer for 8 minutes.

  3. Poach the eggs

    Make wells, crack in the eggs, cover, and cook until set.

  4. Serve

    Serve with the toasted slice bread.

Notes

Around 440 kcal and 22g protein. Naturally lactose-free. Cook the eggs only until the whites are set but the yolks still soft. A pinch of chilli and some fresh herbs lift it.
