Kewpie Sesame Slaw

Method

  1. Shred

    Finely shred the cabbage, finely shredded and grate the carrot, grated (optional).

  2. Dress

    Whisk the Kewpie mayo, cider vinegar and sesame oil into a loose, pourable dressing.

  3. Toast & toss

    Toast the toasted sesame seeds in a dry pan until nutty. Toss the dressing through the cabbage just before serving so it stays crunchy.

Notes

Around 180 kcal for the bowl (mostly the mayo); splits into two ~90 kcal sides. Loosening the Kewpie with vinegar lets a little mayo coat a lot of cabbage — that's the trick to keeping it light. Dress late, or keep dressing and cabbage separate if making ahead, since salt draws water out and it goes limp and watery if it sits.
