Chicken & Vegetable Nabe Hotpot

A one-pot Japanese hotpot — chicken, tofu and vegetables simmered in dashi at the table. Low-effort and very satisfying.

Method

  1. Build the broth

    Bring the dashi or chicken stock, soy sauce and mirin to a simmer in a large pot.

  2. Add carrot & mushrooms

    Add the carrot, sliced and mushrooms (shiitake or chestnut), simmer 5 min.

  3. Add chicken & cabbage

    Add the chicken breast, sliced and Chinese leaf / cabbage, simmer until the chicken is cooked.

  4. Add tofu

    Add the tofu, cubed and warm through.

  5. Optional udon

    Add the nest udon (optional) at the end to soak up the broth.

  6. Serve

    Serve in bowls topped with spring onion.

Notes

Around 490 kcal and 46g protein. Naturally lactose-free. A weekend-cook one-pot — high protein, very low effort for how satisfying it is. Scales up easily for more people; leftovers reheat well.
