Baked Salmon, Broccoli & Sweet Potato

Method

  1. Roast the sweet potato

    Roast the sweet potato wedges at 200°C for 25 minutes.

    Add the salmon fillet and head broccoli for the last 12 minutes.

    Season with the olive oil and serve.

Notes

Around 560 kcal and 40g protein. Naturally lactose-free. Sweet potato wedges take 25-35 min at 200°C; cut them even, single layer, flip halfway. Par-boil 5 min first for crispier wedges.
