Agedashi Tofu with Rice & Greens

Lightly crisped tofu in a savoury dashi broth, with rice and steamed greens. Needs firm tofu.

Method

  1. Coat the tofu

    Press and cube the block firm tofu, coat lightly in the cornflour.

  2. Fry

    Shallow-fry in the oil until golden on all sides.

  3. Make the broth

    Warm the dashi, soy sauce and mirin into a light broth.

  4. Combine

    Sit the tofu in the broth, top with the grated daikon or ginger.

  5. Serve

    Serve with the cooked rice and steamed greens.

Notes

Around 470 kcal and 24g protein. Naturally lactose-free. Needs FIRM tofu — silken will fall apart. The cornflour coating crisps the outside; the broth softens it slightly, which is the point.
